Well, uh, everything.

While buying some salmon for the traditional Chinese New Year yu sheng (raw fish salad) dish yesterday, I discovered to my horror that Japanese tuna (maguro) is going for an astronomical S$388 per kilo. That's S$38.80 for a 100 gram block measuring approximately 2x4x1 inches. How does tuna - tuna, for the love of Christ - get that expensive?

I just checked the exchange rate to put that number in a perspective I can understand, and... the rate isn't nearly bad enough to justify such an outrageous number. What do you usually pay for tuna?

The normal white tuna I get in cans goes for about S$2 for one of those small flat tins. I suspect the prices may be exorbitant because of the season, where tuna, yellowtail and salmon are in demand because of the dish itself.
