Housefilk over at Bill and Brenda's over the weekend, stayed over and impressed everyone with the resonance of my snoring, and then on Saturday had Mary Crowell do some stuff on the CD.
Mary is amazing. She did a piano/organ accompaniment to "The Rest of Forever" which is sheer beauty and lifts the song to a whole new level. She also has a torch song voice to die for.
Pity she's married already. Ain't it always the way?

4 medium sized chicken breasts, diced
3 cloves garlic, chopped
1 large onion, diced
1 small carton whipping cream
Tarragon, oregano, basil, parsley to taste
Pepper
Pinch of salt
Olive oil
Heat oil in saucepan.
Fry garlic until golden brown on a medium heat.
Add onions and cook until translucent.
Add chicken pieces and herbs until cooked through.
Add herbs, pepper and pinch of salt. Tarragon in larger proportions because, after all, this is a tarragon sauce. Most of the flavor comes from the herbs so be generous.
Add cream.
Simmer until cream is slightly thickened (take care not to burn cream).
Serve over hot pasta (I prefer fettucine).
