Actually, it's been clear for some time that T'Pol's emotions have been running wild (for a Vulcan), so the fact that the writers apparently had something in mind and were not simply writing her as out of character is a good thing.

The rest of what you're seeing relates to this season of Enterprise being an actual war story, which is something I don't think we've seen in the Trek universe before.

The first season of Enterprise was pretty weak; the second season better. Overall, I like this season, but you can't properly compare it to the second season because of the overriding season-long story arc.

What I found a bit inexplicable was how come nobody else on the ship seems to really notice that she's out of whack, and Archer doesn't seem to care when she goes on an emotional tear. Or did they already deal with this earlier?

Archer's not having a very good day, so he can be excused for treating her like a human. :)

Recall that the Enterprise crew has already seen the "emotional" bunch of Vulcans, so they may be thinking "Oh, good. T'pol's loosening up."

Trek has done a war story arc before; the last season or two of Deep Space 9 featured all out war against the Dominion, with various shifting alliances with Klingons, Romulans, and Cardassians.

Sorry, but if you ever liked Enterprise, we must now duel with anachronistic phaser weapons.

I haven't seen the show since the "Earth is attacked" season closer, but I can't really imagine it getting worse. Well, maybe if they all transferred to a moonbase and it got knocked out of orbit by nuclear waste and traveled through the galaxy . . . no, that would only be equally bad.
